Title: Salmon Steaks Vinaigrette

Yield: 4 Servings

1tbWhite wine vinegar
2 Oranges, juiced
2 Limes, juiced
4 Cloves garlic, sliced
1/4cOlive oil
1/4cFresh cilantro, chopped
  Salt and pepper to taste
4 Salmon steaks, 8 ounces each

Combine vinegar, orange and lime juices and garlic in mixing bowl. Whisk in the olive oil, cilantro and salt and pepper. Place salmon steaks in shallow non-reactive container and pour the vinaigrette over the salmon; marinate for 60 minutes, turning once. Preheat broiler and broil steaks until cooked through, approximately 5 minutes per side. Serve with 1 tablespoon of vinaigrette drizzled over each steak.
